Bircher Muesli
Tuesday, February 24th, 2009Here is a great breakfast recipe. I prepare it for nearly all special occasions (Mother’s Day, birthdays etc).

1/3 cup currants
1/3 cup chopped dried apricots
2 cups rolled oats
¾ cup milk
Pinch cinnamon
2 cups water
Mix all of the above together, cover and leave in the fridge overnight. Add the rest of the ingredients the next morning.
¾ cup plain yoghurt
400g tin fruit (peach & pear)
1 Tablespoon honey
3 Tablespoons flaked almonds
1 grated green apple (with skin)
1 mashed banana
½ punnet strawberries or other fruit
Serves 6. Will keep for 1 - 2 days in fridge
